- 200g Oyster Mushrooms sliced thinly
- 100g snow peas
- 1 tablespoon olive oil
- 1 brown onion chopped finely
- A clove or two of garlic, crushed or chopped
- 200g short cut bacon rashes, chopped
- 300ml thickened cream
- Black pepper
- 1/2 tablespoon parmesan cheese
- Pasta
- Heat oil in large frying pan over medium heat. Add onion and bacon. Cook, stirring for 5 minutes or until onion is tender
- Add mushrooms, snow peas, garlic and parmesan cheese. Cook for 3 minutes. Stir in cream. Bring to a gentle boil. Reduce heat to medium to low. Simmer for 5 minutes or until the sauce is reduced slightly
- Serve over pasta
