Mushroom Boscaiola

Mushroom Boscaiola
  • 200g Oyster Mushrooms sliced thinly
  • 100g snow peas
  • 1 tablespoon olive oil
  • 1 brown onion chopped finely
  • A clove or two of garlic, crushed or chopped
  • 200g short cut bacon rashes, chopped
  • 300ml thickened cream
  • Black pepper
  • 1/2 tablespoon parmesan cheese
  • Pasta
  1. Heat oil in large frying pan over medium heat. Add onion and bacon. Cook, stirring for 5 minutes or until onion is tender
  2. Add mushrooms, snow peas, garlic and parmesan cheese. Cook for 3 minutes. Stir in cream. Bring to a gentle boil. Reduce heat to medium to low. Simmer for 5 minutes or until the sauce is reduced slightly
  3. Serve over pasta
